Night Shift Vintage 2024 - Imperial Milk Porter Aged in Pedro Ximenez & Rum Barrels with Sour Cherry & Poppy Seed Brasserie L'Apais?eWhen designing the first Imperial Milk Porter, we knew we wanted to create something very special, which we also envisioned as a fruity Night Shift batch. The condensed base beer was transferred to freshly emptied Pedro Ximnez Sherry and rum barrels for 6 months, allowing the woody notes of the barrel to enhance the base beer's cherry, poppyseed, and subtly milky chocolate flavor profile, creating this truly pastry like, full bodied batch.

bourbon barrels for 12 months

aged in a single barrel of Woodford Reserve Bourbon for over 18 months and finished with cinnamon and vanilla

ultimately aging with two full pounds of vanilla beans over the course of a year

The rich brown sugary pie crust malt character of the base beer sings in these barrels -- we're pulling flavors of vanilla

Not very sour

While we will be sourcing barrels directly from bodegas to assure provenance and quality
